Coconut flour is uniquely different from wheat flour alternatives. It is naturally low in digestible carbohydrates and contains no gluten. It has fewer carbohydrates than soy or nut flours but is high in fiber and a good source of protein. Coconut flour is four times higher in fiber than oat bran, two times higher in fiber than wheat bran, and three times higher in fiber than ground flaxseed. Coconut flour also contains more protein than white flour, rye flour, or cornmeal. It has as much protein as buckwheat or whole wheat flours.
HOW DOES ORGANIC COCONUT FLOUR COMPARE TO OTHER ALTERNATIVE FLOURS?
Rice, soy, and potatoes are often the base for wheat flour alternatives. Even though these products do not contain gluten, they are still high in carbohydrates. The taste and texture of alternative flours are often not as tasty. These products often contain flavor enhancers and sweeteners to help make them more palatable. Often it’s just those who need to avoid wheat for allergies or dietary preferences that use these products.
Many regard raw coconut flour as one of the most versatile flours. Bread made with coconut flour is light and soft and has a wonderful taste and texture. HOW IS OUR ORGANIC COCONUT FLOUR DIFFERENT FROM OTHER BRANDS?
Wildly Organic’s coconut flour is similar to other coconut flours with a few exceptions: The organic coconuts are dried at low temperatures, and the dried coconut is pressed slowly and carefully to avoid generating heat, and no "toasting" of the flakes occurs. Our raw coconut flour is white rather than the beige or light tan of other brands. This gentle process means there is slightly more oil in our coconut flour, making it more flavorsome.
HOW CAN YOU USE ORGANIC COCONUT FLOUR IN YOUR KITCHEN?
As a rule, you need to add approximately six eggs for every ½ cup of coconut flour you use in your recipe and increase liquids because the fiber is very absorbent. Eggs will take the place of the gluten found in wheat and help the fiber to stick together. Adding coconut flour to smoothies is a great way to add fiber to your diet. Coconut flour is more palatable in smoothies than other fiber, even though it supplies more roughage than other sources.
HOW DO I SUBSTITUTE ORGANIC COCONUT FLOUR INTO MY RECIPE?
Because coconut flour does not contain any gluten, it will fall apart if you use it as a cup for cup substitute for typical wheat flour. You can, however, substitute up to 25% (15-20% is best) of that flour with coconut flour. In addition, whatever amount of coconut flour you use, you need to increase the liquid in your recipe by that same measure. So, for example, if your recipe calls for 2 cups of wheat flour, you could use 1 ½ cups of wheat flour, ½ cup of coconut flour, and ½ cup of additional liquid such as milk, water, or juice. This will greatly increase the fiber content of your food.
